Making Tofu scramble is just as easy as making scrambled eggs (or easier) because the tofu won't get overcooked as easily. It's a high-protein alternative to eggs that you can incorporate into your routine to mix up the protein sources.
Tofu Taco Scramble Recipe
Ingredients:
  • 1 block firm or extra-firm tofu (14 oz), drained and gently pressed to remove water
  • 1 tbsp olive oil (or any cooking oil)
  • 1 garlic clove (optional) or 1 teaspoon garlic powder
  • 1/4 tsp turmeric powder (for color)
  • 1/2 tsp ground cumin (optional, for a more savory taste)
  • 1/2 teaspoon sea salt to taste
  • 2 tbsp nutritional yeast (optional, for a cheesy flavor)
  • Fresh spinach or kale (optional, for added greens)
Directions:
Prepare the tofu:
Drain and press the tofu to remove excess water. You can do this by wrapping it in a clean towel and placing something heavy on top for a few minutes.
Crumble the tofu into bite-sized pieces using your hands or a fork. Set aside. Cook tofu: Heat olive oil in a skillet over medium heat. Add crumbled tofu, and spices to a medium pan and sauté for about five minutes until all the flavors are well combined. Add nutritional yeast if using.
If using fresh spinach or kale, toss it in at the last minute to wilt before serving.

Serve on its own, or with fresh tortillas, a little hot sauce, and cilantro to garnish.
