Healthy Snicker Ball Recipe
⅓ cup creamy peanut butter
1 T honey
1 t vanilla extract
2 lightly salted rice cakes
½ cup roasted, salted peanuts, crushed
½ cup chocolate chunks or chips
2 t coconut oil
Flaky sea salt to top
In a medium bowl, mix together the peanut butter, honey, and vanilla extract until smooth. Crumble the rice cakes and mix in. Add crushed peanuts, reserving some for the topping. Using about 2 tablespoons of the mixture form a ball and pack it well. Mixture should yield 6 balls. In a separate bowl melt the chocolate chips and coconut oil together in the microwave (or in a double boiler) in 15 second intervals until smooth and glossy.
Submerge the balls into the chocolate mix and roll until thoroughly coated. Transfer to a lined baking sheet or plate and top with flaky sea salt and crushed peanuts. Refrigerate until chocolate has hardened, about 30 minutes. Enjoy! :)
